Ingredients

  • 2 cups sweetened or unsweetened shredded coconut
  • 1 cup almond flour
  • 1/2 cup powdered sugar
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract

Instructions

  • In a large bowl, mix all the ingredients together. Save some coconut for the end.
  • Roll small portions into balls
  • Place the coconut balls on a plate lined with parchment paper or foil
  • Refrigerate for about 30 minutes
  • Roll the chilled coconut balls in some of the shredded coconut for a snowy effect.
  • Keep refrigerated until ready to serve.
