Equipment

  • 1 medium mixing bowl
  • 1 baking sheet

Ingredients

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar or sugar substitute
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder

Instructions

  • Cream together the softened butter, granulated sugar, and brown sugar until smooth
  • Beat in eggs one at a time
  • Add the vanilla and mix well
  • In a separate bowl, whisk together the flour, baking soda, and the baking powder
  • Gradually mix the dry ingredients with the wet ingredients. Don't over-mix
  • Chill dough for 30 minutes to make it firm for handling. (optional)
  • Either make individual cookies with your favorite holiday cookie cutters or make them into a log for easy slicing.
  • If bringing it to your campsite, wrap it with parchment paper or plastic wrap for ease of transport
  • When ready to bake at your campsite, place dough onto a baking sheet or any other campfire-friendly tray.
  • Bake until the edges are golden brown.
  • Let them cool before enjoying them.
